Imagine a cozy room filled with the delightful sizzle of steaks on hot plates, the sound like tiny, happy fireworks. As one bottle of wine empties, another freshly opened one magically appears. Plates laden with a variety of flavorful dishes are passed around.

 

This scene describes a "Txoko" (pronounced "chock-oh"), which literally means ‘cosy corner’. These are private gastronomic societies unique to northern Spain, where members gather regularly to wholeheartedly enjoy the simple pleasures of cooking, eating, and drinking together.

 

These societies exist purely for the enjoyment of their members, which truly captures the essence of what cooking, eating, and drinking should be.

Our grass-fed beef is sourced from mature cows that graze freely across the hills of Galicia in North-West Spain. This careful selection of older animals allows for a naturally elevated fat content, resulting in exquisite marbling and a more intense flavour profile.

Furthermore, the natural diet of these cows contributes to the distinctively firm texture of the beef.
